Is Wolf Marcel Vigneron's Meaty Counterpart to His Upcoming Vegetarian Concept?

The Top Chef has fast casual vegetarian plans, but may go meaty first.

LA Weekly lands some new intel on Marcel Vigneron’s upcoming Melrose Avenue restaurant. What has for a long time been known as Beefsteak may actually end up being called Wolf, says critic Besha Rodell, pointing to an Instagram hiring post that Vigneron himself put up not long ago.

The former Top Chef contestant indeed calls the place Wolf in the post, and says it will be a seasonal Los Angeles restaurant that relies on “precise technical execution.” Frankly that doesn’t sound much like the Beefsteak we’ve been hearing about, which has long been told to be a vegetarian fast casual concept with immediate plans to scale into several storefronts. There’s even a Beefsteak website and menu already.

So what is Wolf, and where did it come from? Well, it’s likely that Vigneron is simply putting the other half of his cafe space to good use. Remember, the former 8 Oz. Burger Bar location actually used to be two storefronts that got combined into one, and the chef has hinted in the past that the opposite side of the space would not be vegetarian, and may in fact be quite carnivorous. So it’s likely that Wolf will be that, the first of two side-by-side concepts from the chef to eventually open on Melrose.

Still, hiring up doesn’t mean the place is opening tomorrow. There was still a lot of work to be done back in November, but assuming most of the hurdles are cleared a spring opening could be likely. And as for Beefsteak, should it still be coming to life? Well, who knows when that one drops.
