—Need your steakhouse fix on your Sin City getaway? Luckily Las Vegas has a plethora restaurants ideal for those with carnivorous predilections. Eater Vegas not only tells you where to go, but what to order, with standout carnage like Carnevino’s 240-day dry aged beef and Bazaar Meat’s foie gras cotton candy.
—Las Vegas’ loss is LA’s gain, as both Eater Vegas and we here at Eater LA reported that Steve Benjamin, the executive chef at L’Atelier de Joël Robuchon, will be ending his 12-year stint at the award-winning MGM Grand restaurant to take on a new role at LA’s upcoming Waldorf Astoria in Beverly Hills.
—Circus Circus has announced a massive $4 million renovation of its pool, and with plenty of new dining options that come in the form of food trucks. That’s right, the MGM portfolio property is currently in the permitting process to allow catering by local food trucks and carts, which could be a major improvement from the standard poolside fare of chicken fingers and pizza.
—One of Las Vegas’ most anticipated restaurant openings, Bandito Latin Kitchen & Cantina is well on its way to its late spring debut. The Kent Harmon concept with a focus on Latin American cuisine promises a colorful interior and housemade tortillas and salsas to go with its heavily Mexican menu.

—If you’re heading out to Sin City in the coming months, you’re in luck, as Las Vegas has some pretty exciting new restaurants slated to open this season. Get excited for Top Chef Masters’ chef Lorena Garcia’s Venetian debut, LA’s own Canter’s in Tivoli Village, and MB Steak in the Hard Rock. Get all the scoop here.
—Speaking of anticipated openings, the Miracle Mile Shops are about to get an unnamed robotic bar. That’s right, this the self-described “first Robotic Bar in the World” will likely be able to shake and stir libations in thousands of different combinations. Get your bionic cocktail at the end of June.
—Breakfast is already considered the most important meal of the day, but given the overindulgence that takes place into the wee morning hours in Sin City, it takes on an even more important role. Luckily the city has plenty of great options from off-Strip diners to flashy celebrity chef-backed concepts. Check them all out here.
—Fans of a certain alliteration-heavy Food Network show hosted by Guy Fieri may be familiar with Metro Cafe, apparently what is one of the spiky-haired chef’s favorite restaurants. The Jacksonville, Florida-based eatery will open not one but three outlets in Sin City, serving all-day fare that includes chicken and waffles with strawberry butter and Charleston shrimp and grits.

—Sin City sure does love its LA concepts. The latest LA-to-Vegas transplant is Rock and Reilly’s, West Hollywood and Downtown LA’s raucous Irish pub with rock ‘n’ roll vibes. Chances are it will take over the recently shuttered, expansive digs of the former Heart Attack Grill in the Hawaiian Marketplace.
Fun tidbit: Pearl’s Sunset Strip, the other LORE Group bar next to the original Rock and Reilly’s West Hollywood was initially set to make its sophomore effort in The Linq before the space was given to the Strip’s first In-N-Out, yet another Southern California-based spot.
—Apparently Vegas likes its New York concepts too, as the Big Apple’s iconic Papaya King will open its second location of the hot dog purveyor on the Strip. This one is also opening in Hawaiian Marketplace. Beyond hot dogs and fries, this outlet will also offer boozy selections like banana daiquiris, coconut champagne, and piña coladas.

—Sin City is quite the place to spend Super Bowl weekend, what with all the debauchery that comes with the big game. There’s no shortage of exceptional places to catch the New England Patriots and the Atlanta Falcons go head to head, with big screens and plenty of wings and brews to go around. —Those who love reality TV cooking shows will be glad to know that recent Hell’s Kitchen winner Kimberly Ann Ryan is now helming the stoves at The Venetian’s Yardbird Southern Table & Bar. Hopefully a season of Gordon Ramsay tirades results in some great cooking.

Restaurant pick of the week: MR CHOW
Sure, there’s a MR CHOW in more than a few metropolitan cities around the world. But the newest location in Caesars Palace is so extraordinarily over-the-top that if would only feel appropriate in Sin City. It’s worth a visit alone to take in the design—with a supremely contemporary aesthetic, stark white walls, and a kinetic light fixture, you may feel as if you’re at the heart of Star Trek Enterprise, just with better food. —The latest buzzy restaurant opening to hit the Strip is Zuma in the Cosmopolitan. The London-based restaurant is taking over the reigns as the go-to sushi restaurant in the hotel as Blue Ribbon announced its shutter weeks back. The restaurant features three kitchens—the main kitchen, sushi counter, and robata grill—with menu highlights that include suzuki no sashimi, wagyu beef with caviar, and sake-glazed chicken wings.
—DB Brasserie’s recent closure left a gap in the dining roster of The Venetian. Filling the hole is Top Chef Masters contestant Lorena Garcia, who, along with John Kunkel, will open the resort’s first Latin concept, Chica. The menu promises influences from Venezuela, Peru, Brazil, Mexico, and Argentina which should be a welcome addition to the Strip.
—Food Network TV star Robert Irvine has had some pretty lofty words for his first Las Vegas restaurant. However, most of the details about the new Tropicana eatery have been pretty mum until now. Recent renderings reveal that the restaurant may be named “Robert Irvine On The Strip.” Check them out here.
—Wynn Las Vegas’ Parasol has been revived thanks to a $1.2 million facelift. The new space features cream and gold tones alongside a slew of new cocktails.

—The latest restaurant opening in Sin City comes by way of the J.W. Marriott’s Hawthorne Grill. The sleek new steakhouse is outfitted with leather banquettes, industrial chandeliers, and comes with views of the waterfalls and ponds that surround the restaurant. Should be a nice place to enjoy a meaty meal.
—MR CHOW is gearing up for quite a few birthdays in the coming year. First up is the one-year anniversary of its Caesars Palace home. The restaurant is celebrating by taking it back to 1968 with a dish that was on the opening menu of the original London location, Beijing shredded pork with lotus buns. Both the hotel and restaurant brand will soon be celebrating their 50th birthdays with what will surely be plentiful festivities as well.
—John Rich of county music band Big & Rich fame has finally debuted his “Nashville-style honky tonk bar” Redneck Riviera in the Grand Bazaar shops. Is there an American flag made out of beer cans and a horse saddle disco ball? You bet your buttons.
Restaurant pick of the week: Bacchanal Buffet
It just isn’t a trip to Vegas without reveling in one of the city’s many buffets. But if you‘re going to allocate one of your precious meal times on your weekend getaway to such a feast, you’d best save your stomach space for Bacchanal. The Caesars Palace temple of gluttony exemplifies a buffet of the highest order. Is there a mountain of crab legs? A sushi station, interactive taco bar, and more desserts than one can reasonably count? You’d better believe it. Are you going to have to undo the top button of your jeans? —Brace yourselves: David Chang’s Momofuku has finally opened in The Cosmopolitan. The first night of service was Tuesday, January 10, and is currently operating with limited soft opening hours of 5:30 to 10 p.m. Inside is a massive David Choe mural with cameos of Choe and Chang’s beloved dogs.
The menu will change nightly, but the current iteration offers a smattering of small plates, Chang’s iconic buns, ramen, and meat and seafood dishes. Those really looking to ball out can order off the large format menu, where groups of diners have the option to feast on things like bo ssam or a truly epic meal comprised of fried chicken, caviar, and Veuve Cliquot.
—Next to Momofuku is Christina Tosi’s Milk Bar, the New York bakery that is scouting locations in Los Angeles. The counter service spot opened around the holidays and offers Tosi’s famed cookies, cereal milk, crack pie, and especially befitting of Sin City, boozy milkshakes.
—As if these past few weeks in Vegas hasn’t seen enough monumental openings, In-N-Out also opened its doors in The Linq. The 5,023-square-foot space features indoor and outdoor seating and a menu with prices that are pretty hard to beat on the strip. Check out the menu that you are probably already familiar with here.

—Serendipity 3, the Caesar’s Palace branch of the New York institution famed for its frozen hot chocolates, has been shut down after a series of very Bravo reality series-worthy events. Rowen Seibel, the licensed operator of the prominent Strip-facing eatery, was released from prison just six days before the closure of the restaurant. The shamed restauranteur and former Gordon Ramsay business partner was locked up for hiding at least $1,011,279 in taxable earnings from the IRS in undeclared “Swiss bank accounts and a Panamanian shell company.” Yikes.
—In an understandable attempt to rid themselves of any Seibel association, Caesar’s Palace has very quickly turned around the former Serendipity 3 space with a new in-house concept dubbed Stripside Café & Bar. With such prime real estate, it should hopefully be a nice spot to enjoy casual breakfast and lunch fare.
—In-N-Out Burger is about to debut its snazzy new shop at The Linq hopefully at the end of the month. Expect a mezzanine, outdoor patio, and “Company Store” for super fans.
—There’s been a lot of moving and shaking at The Cosmopolitan, what with the arrival of Momofuku Milk Bar and the David Chang restaurant well on its way. Well now Blue Ribbon Sushi Bar & Grill has announced its revamp, as owners Eric and Bruce Bromberg will flip the restaurant from a sushi-centric spot to a restaurant fashioned after New York’s Blue Ribbon Brasserie. The reconcepting seems to make a whole lot of sense, as Zuma, the sushi restaurant out of London, is due to open jut across the hall later this month.

—A stunning new cocktail lounge opened today in the Venetian on the casino floor. Dubbed The Dorsey, the bar is perhaps the swankiest new spot to sip craft libations on the Strip. That’s thanks to cocktail maven Sam Ross (New York City’s Attaboy and Milk & Honey, and LA’s Comme Ça). The luxurious French oak and leather sofa-adorned space is quite the setting to enjoy Ross’ signature libations, including his decorated Penicillin with scotch, fresh lemon, ginger, honey, and an Islay float.
—East Coast concepts are fast invading both New York and LA. What is perhaps the most anticipated NY-to-Vegas eateries, Momofuku, is now slated to open in early 2017 in the Cosmopolitan with a menu that pulls from David Chang’s various NYC eateries. Think Fuku chicken sandwiches, ramen from Noodle Bar, and fried chicken with caviar and bo ssam from Ssam Bar.
—In other Venetian news, Daniel Boulud’s DB Brasserie will close its doors on January 8, which means there’s still time for fans of the talented French chef to snag duck confit with some pretty tasty tipples from the bar.
—Los Angeles already has its fair share of arcadestaurants, and now Sin City is also getting its due. MGM’s Hakkasan-backed Level Up is a sort of entertainment haven located in the former Rainforest Cafe with craft beers and cocktails, arcade games, and the “world’s first indoor laser golf course.”
