Two Big Restaurant Names Take the Reins at The Flats in Beverly Hills

With opening chef Kyle Schutte departing, newcomers enter the fray

Things are changing rapidly at The Flats in Beverly Hills, now that opening chef/partner Kyle Schutte has decided to move on. In his stead comes a near full revamp of the restaurant, with a couple of big-named local vets stepping in to help.

While The Flats won’t be changing its name or tossing out the old decor, the menu is earning a full revamp thanks to longtime chef Paul Shoemaker, who earned a Michelin Star while running things at Bastide years ago. He’s also been seen over the years at the French Laundry, Providence, and Firefly up in the Valley, and has his own projects coming down the line next year as well. In the meantime he’s in at The Flats, helping to oversee a full menu relaunch that should come next month.

On the bar side is Marcos Tello, a longtime consultant who has helped install drink programs at places like 1186 and Downtown’s Birds & Bees. Tello is a cocktail vet held in high esteem, so look for an update on the drinks to come in November as well. Until then, expect a few weeks of transition at The Flats — not that the place has necessarily been free from ups and downs until now.
